Beer bottle and glass

A British take on the classic French onion soup using IPA beer. Serve it for an informal get together or after match dinner with some grilled cheese sandwiches or slices of garlic bread. This creamy soup with a hint of bitterness from the beer will warm you up after a cold winters day.

  • 3 medium yellow onions
  • 1 Tbs  butter
  • 2 bottles of IPA beer or larger (330ml)—not too bitter
  • I litre beef stock
  • 200ml  cream (25-28ml)
  • 4 egg yolks
  • Paprika powder (not smoked)
  • Salt and pepper


  1. Half and then thinly slice the onions
  2. Sauté in butter until fully soft (do not brown so cook with low heat)
  3. Add the beer and the stock and simmer for 30 mins
  4. Strain through a sieve and force all the onions through the sieve
  5. Whip 100ml of cream with the egg yolk
  6. Whip the remaining 100ml of cream
  7. Put the soup back on the stove and add salt and pepper and add the cream and egg yolk—whisking strongly—but do not boil
  8. Serve  in individual soup bowls and decorate with the whipped cream garnished with paprika
